- Quinoa - 100 grams
- Water - 250 ml
- Ground turkey or chicken - 200 grams
- Zucchini - 50 grams, grated
- Carrot - 50 grams, grated
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh basil - 1 tablespoon, chopped
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red chili flakes - 1/4 teaspoon (optional)
Steps
- Rinse the quinoa under cold water and drain well.
- In a saucepan, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool slightly.
- In a large bowl, combine ground turkey or chicken, grated zucchini, grated carrot, minced garlic, chopped parsley, chopped basil, egg, cooked quinoa, salt, black pepper, and red chili flakes. Mix until fully combined.
- Form the mixture into 2 patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and cooked through.
- Serve hot, optionally with fresh lettuce and sliced tomatoes.
