Ingredients

  • ground beef (80% lean) - 250 grams
  • dried porcini mushrooms - 30 grams
  • fresh parsley - 2 tablespoons, chopped
  • garlic - 1 clove, minced
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • olive oil - 1 tablespoon
  • burger buns - 2 pieces
  • arugula - 50 grams
  • truffle oil - 1 teaspoon
  • parmesan cheese - 20 grams, shaved

Steps

  1. Soak the dried porcini mushrooms in warm water for about 20 minutes until softened, then drain and finely chop them.
  2. In a mixing bowl, combine the ground beef, chopped porcini mushrooms, parsley, minced garlic, salt, and black pepper. Mix until just combined.
  3. Form the mixture into two equal-sized patties, about 2 cm thick.
  4. Heat the olive oil in a skillet over medium-high heat. Cook the patties for 4-5 minutes on each side, or until they reach your desired level of doneness.
  5. While the patties are cooking, lightly toast the burger buns in a separate pan or under the broiler until golden.
  6. Assemble the burgers by placing the cooked patties on the bottom half of each bun, topping with arugula, shaved parmesan, and a drizzle of truffle oil. Place the top bun and serve immediately.
