Ingredients

  • Ground chicken - 300 grams
  • Basil pesto - 50 grams
  • Garlic cloves - 1, minced
  • Parmesan cheese - 30 grams, grated
  • Whole grain burger buns - 2
  • Ripe tomatoes - 1, sliced
  • Fresh mozzarella - 50 grams, sliced
  • Arugula - 30 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the ground chicken, basil pesto, minced garlic, grated Parmesan cheese, salt, and black pepper. Mix until well combined.
  2. Form the mixture into two equal patties, about 1.5 cm thick.
  3. Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the chicken patties and cook for about 6-7 minutes on each side, or until they are fully cooked and golden brown.
  4. While the patties are cooking, slice the whole grain buns and prepare the toppings: slice the tomato and mozzarella cheese.
  5. Once the patties are done, assemble the burgers: place each patty on a bun, top with sliced mozzarella, tomato, and a handful of arugula.
  6. Serve immediately with a side of fresh salad or baked sweet potato fries.
