- Whole grain burger buns - 2
- Ripe tomatoes - 1, sliced
- Fresh mozzarella - 50 grams, sliced
- Arugula - 30 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the ground chicken, basil pesto, minced garlic, grated Parmesan cheese, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal patties, about 1.5 cm thick.
- Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the chicken patties and cook for about 6-7 minutes on each side, or until they are fully cooked and golden brown.
- While the patties are cooking, slice the whole grain buns and prepare the toppings: slice the tomato and mozzarella cheese.
- Once the patties are done, assemble the burgers: place each patty on a bun, top with sliced mozzarella, tomato, and a handful of arugula.
- Serve immediately with a side of fresh salad or baked sweet potato fries.
