Ingredients

  • Swordfish fillet - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lettuce leaves - 4 large
  • Tomato - 1 medium, sliced
  • Red onion - 1/4 medium, sliced
  • Capers - 1 tablespoon, rinsed and drained

Steps

  1. In a food processor, add the swordfish fillet and pulse until finely minced.
  2. Transfer the minced swordfish to a mixing bowl and add almond flour, egg, parsley, garlic, lemon juice, salt, and black pepper. Mix until well combined.
  3. Form the mixture into two equally sized patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the swordfish patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, prepare the burger assembly. On a large lettuce leaf, place a swordfish patty, then top with tomato slices, red onion, and capers.
  6. Drizzle with remaining olive oil if desired, and serve immediately.
