Ingredients

  • Fresh white fish fillets (such as cod or haddock) - 300 grams
  • Almond flour - 50 grams
  • Parmesan cheese, grated - 30 grams
  • Egg - 1 large
  • Garlic, minced - 1 clove
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Salt - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Olive oil - 2 tablespoons
  • Romaine lettuce leaves - 4 large
  • Avocado, sliced - ½ medium
  • Cherry tomatoes, halved - 100 grams

Steps

  1. In a food processor, add the fish fillets and pulse until finely chopped but not pureed.
  2. In a mixing bowl, combine the chopped fish, almond flour, Parmesan cheese, egg, minced garlic, parsley, lemon zest, salt, and black pepper. Mix until well combined.
  3. Form the mixture into two patties, about 2 cm thick.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the fish patties and cook for about 4-5 minutes on each side or until golden brown and cooked through.
  5. While the patties are cooking, prepare the lettuce by washing and patting them dry. Slice the avocado and halve the cherry tomatoes.
  6. Once the patties are done, remove them from the skillet and let them rest for a minute. Assemble the burgers by placing each patty on a romaine lettuce leaf, topping with avocado slices and cherry tomatoes.
  7. Drizzle with the remaining olive oil and serve immediately.
