- Fresh white fish fillets (such as cod or haddock) - 300 grams
- Almond flour - 50 grams
- Parmesan cheese, grated - 30 grams
- Egg - 1 large
- Garlic, minced - 1 clove
- Fresh parsley, chopped - 2 tablespoons
- Lemon zest - 1 teaspoon
- Salt - ½ teaspoon
- Black pepper - ¼ teaspoon
- Olive oil - 2 tablespoons
- Romaine lettuce leaves - 4 large
- Avocado, sliced - ½ medium
- Cherry tomatoes, halved - 100 grams
Steps
- In a food processor, add the fish fillets and pulse until finely chopped but not pureed.
- In a mixing bowl, combine the chopped fish, almond flour, Parmesan cheese, egg, minced garlic, parsley, lemon zest, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties, about 2 cm thick.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the fish patties and cook for about 4-5 minutes on each side or until golden brown and cooked through.
- While the patties are cooking, prepare the lettuce by washing and patting them dry. Slice the avocado and halve the cherry tomatoes.
- Once the patties are done, remove them from the skillet and let them rest for a minute. Assemble the burgers by placing each patty on a romaine lettuce leaf, topping with avocado slices and cherry tomatoes.
- Drizzle with the remaining olive oil and serve immediately.
