- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Lettuce leaves - 2 pieces
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
- Whole grain buns - 2 pieces
Steps
- Preheat your oven to 180°C (350°F).
- In a food processor, combine walnuts, cooked quinoa, breadcrumbs, minced garlic, chopped red onion, parsley, salt, pepper, and paprika. Pulse until the mixture is well combined but still has some texture.
- Form the mixture into two patties and place them on a parchment-lined baking sheet.
- Drizzle olive oil over the patties and bake in the preheated oven for 20 minutes, flipping halfway through.
- While the patties are baking, prepare the toppings: wash and dry the lettuce, slice the tomato and avocado.
- Once the patties are done, assemble your burger by placing a walnut patty on each bun, topping with lettuce, tomato, and avocado slices.
