  • Garlic - 1 clove, minced
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Lettuce leaves - 2 pieces
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced
  • Whole grain buns - 2 pieces

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a food processor, combine walnuts, cooked quinoa, breadcrumbs, minced garlic, chopped red onion, parsley, salt, pepper, and paprika. Pulse until the mixture is well combined but still has some texture.
  3. Form the mixture into two patties and place them on a parchment-lined baking sheet.
  4. Drizzle olive oil over the patties and bake in the preheated oven for 20 minutes, flipping halfway through.
  5. While the patties are baking, prepare the toppings: wash and dry the lettuce, slice the tomato and avocado.
  6. Once the patties are done, assemble your burger by placing a walnut patty on each bun, topping with lettuce, tomato, and avocado slices.
