Ingredients

  • Shrimp (peeled and deveined) - 250 grams
  • Garlic (minced) - 1 clove
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Cornstarch - 2 tablespoons
  • Olive oil - 2 tablespoons (for cooking)
  • Gluten-free burger buns - 2
  • Lettuce leaves - 2
  • Tomato (sliced) - 1 medium
  • Avocado (sliced) - 1 small
  • Mayonnaise - 2 tablespoons (optional)

Steps

  1. In a food processor, combine the shrimp, garlic, parsley, lemon zest, salt, and black pepper. Pulse until the mixture is finely chopped but not pureed.
  2. Transfer the shrimp mixture to a bowl and add the egg and cornstarch. Mix well until all ingredients are combined.
  3. Divide the mixture into two equal portions and shape them into patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until they are golden brown and cooked through.
  5. While the patties are cooking, toast the gluten-free burger buns until lightly golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the shrimp patty, tomato slices, and avocado slices. Add mayonnaise if desired, then top with the other half of the bun.
  7. Serve immediately with your favorite sides.
