Ingredients
- Chicken liver - 250 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1 large
- Almond flour - 2 tablespoons
- Fresh arugula - 50 grams
- Parmesan cheese - 20 grams, grated
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat, add the minced garlic, and sauté until fragrant.
- Add the chicken liver to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.
- Remove the skillet from heat and let the liver cool slightly before transferring it to a mixing bowl.
- To the bowl, add the chopped parsley, dried oregano, salt, black pepper, egg, and almond flour, then mix well until combined.
- Form the mixture into two patties.
- In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat.
- Cook the liver patties for about 4-5 minutes on each side, or until golden brown and cooked to your liking.
- Serve the patties on a bed of fresh arugula and sprinkle with grated Parmesan cheese.
