Ingredients

  • Chicken liver - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Almond flour - 2 tablespoons
  • Fresh arugula - 50 grams
  • Parmesan cheese - 20 grams, grated

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat, add the minced garlic, and sauté until fragrant.
  2. Add the chicken liver to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.
  3. Remove the skillet from heat and let the liver cool slightly before transferring it to a mixing bowl.
  4. To the bowl, add the chopped parsley, dried oregano, salt, black pepper, egg, and almond flour, then mix well until combined.
  5. Form the mixture into two patties.
  6. In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat.
  7. Cook the liver patties for about 4-5 minutes on each side, or until golden brown and cooked to your liking.
  8. Serve the patties on a bed of fresh arugula and sprinkle with grated Parmesan cheese.
