- Fava beans (cooked, peeled) - 200 grams
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Chickpea flour - 3 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Tomato - 1, sliced
- Lettuce leaves - 2
- Avocado - 1/2, sliced
Steps
- In a large mixing bowl, mash the cooked fava beans using a fork or potato masher until smooth but slightly chunky.
- Add minced garlic, chopped parsley, olive oil, chickpea flour, ground cumin, salt, and black pepper to the mashed fava beans. Mix until well combined.
- Form the mixture into two equal-sized patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and heated through.
- Toast the whole grain burger buns lightly on the skillet until golden.
- Assemble the burgers by placing each fava bean patty on a bun, topping with lettuce, tomato slices, and avocado. Close the buns and serve immediately.
