Ingredients

  • Fava beans (cooked, peeled) - 200 grams
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Chickpea flour - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Tomato - 1, sliced
  • Lettuce leaves - 2
  • Avocado - 1/2, sliced

Steps

  1. In a large mixing bowl, mash the cooked fava beans using a fork or potato masher until smooth but slightly chunky.
  2. Add minced garlic, chopped parsley, olive oil, chickpea flour, ground cumin, salt, and black pepper to the mashed fava beans. Mix until well combined.
  3. Form the mixture into two equal-sized patties, about 1.5 cm thick.
  4. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and heated through.
  5. Toast the whole grain burger buns lightly on the skillet until golden.
  6. Assemble the burgers by placing each fava bean patty on a bun, topping with lettuce, tomato slices, and avocado. Close the buns and serve immediately.
