Ingredients

  • Canned cannellini beans - 400 grams, drained and rinsed
  • Breadcrumbs - 100 grams
  • Grated Parmesan cheese - 30 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Red onion - 1/4, sliced

Steps

  1. In a large bowl, mash the drained cannellini beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, dried oregano, salt, and black pepper to the mashed beans. Mix until well combined.
  3. Shape the mixture into two patties, about 1.5 cm thick, and place them on a plate.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, carefully add the patties and cook for about 4-5 minutes on each side, until golden brown and heated through.
  5. While the patties are cooking, toast the burger buns in a separate pan or toaster until lightly golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the bean patty, a slice of tomato, and some red onion. Top with the other half of the bun and serve immediately.
