- Canned cannellini beans - 400 grams, drained and rinsed
- Breadcrumbs - 100 grams
- Grated Parmesan cheese - 30 grams
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Red onion - 1/4, sliced
Steps
- In a large bowl, mash the drained cannellini beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, dried oregano, salt, and black pepper to the mashed beans. Mix until well combined.
- Shape the mixture into two patties, about 1.5 cm thick, and place them on a plate.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, carefully add the patties and cook for about 4-5 minutes on each side, until golden brown and heated through.
- While the patties are cooking, toast the burger buns in a separate pan or toaster until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the bean patty, a slice of tomato, and some red onion. Top with the other half of the bun and serve immediately.
