- Octopus - 300 grams
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 small, diced
- Red onion - 1/4, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Start by boiling the octopus in a pot of salted water for about 20 minutes until tender. Remove and allow to cool slightly.
- Once cooled, cut the octopus into bite-sized pieces and marinate it in a bowl with olive oil, lemon juice, minced garlic, salt, and pepper for about 10 minutes.
- Preheat the grill to medium-high heat. Grill the marinated octopus pieces for about 2-3 minutes on each side until they have nice grill marks.
- While the octopus is grilling, prepare the salad by combining the cherry tomatoes, cucumber, red onion, and parsley in a large bowl.
- Once the octopus is done, add it to the salad mixture and toss gently.
