Ingredients

  • Octopus - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 small, diced
  • Red onion - 1/4, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by boiling the octopus in a pot of salted water for about 20 minutes until tender. Remove and allow to cool slightly.
  2. Once cooled, cut the octopus into bite-sized pieces and marinate it in a bowl with olive oil, lemon juice, minced garlic, salt, and pepper for about 10 minutes.
  3. Preheat the grill to medium-high heat. Grill the marinated octopus pieces for about 2-3 minutes on each side until they have nice grill marks.
  4. While the octopus is grilling, prepare the salad by combining the cherry tomatoes, cucumber, red onion, and parsley in a large bowl.
