- Black pepper - 1/2 teaspoon
- Ricotta cheese - 200g
- Parmesan cheese - 30g, grated
- Fresh basil - 10g, chopped
- Garlic - 1 clove, minced
- Marinara sauce - 200g
- Mozzarella cheese - 100g, shredded
Steps
- Preheat your grill or grill pan over medium-high heat.
- Slice the eggplant lengthwise into 1/2 cm thick slices.
- Brush both sides of the eggplant slices with olive oil and season with salt and black pepper.
- Grill the eggplant slices for about 3-4 minutes on each side until they are tender and have grill marks.
- In a mixing bowl, combine ricotta cheese, grated Parmesan, chopped basil, and minced garlic. Mix well until smooth.
- Place a spoonful of the ricotta mixture at one end of each grilled eggplant slice and roll it up tightly.
- In a baking dish, spread a layer of marinara sauce on the bottom, then arrange the eggplant rollatini seam-side down on top of the sauce.
- Pour the remaining marinara sauce over the rollatini and sprinkle shredded mozzarella cheese on top.
- Bake in the preheated oven at 180°C for about 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let it cool for a few minutes, then serve warm, garnished with additional fresh basil if desired.
