Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ricotta cheese - 200g
  • Parmesan cheese - 30g, grated
  • Fresh basil - 10g, chopped
  • Garlic - 1 clove, minced
  • Marinara sauce - 200g
  • Mozzarella cheese - 100g, shredded

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. Slice the eggplant lengthwise into 1/2 cm thick slices.
  3. Brush both sides of the eggplant slices with olive oil and season with salt and black pepper.
  4. Grill the eggplant slices for about 3-4 minutes on each side until they are tender and have grill marks.
  5. In a mixing bowl, combine ricotta cheese, grated Parmesan, chopped basil, and minced garlic. Mix well until smooth.
  6. Place a spoonful of the ricotta mixture at one end of each grilled eggplant slice and roll it up tightly.
  7. In a baking dish, spread a layer of marinara sauce on the bottom, then arrange the eggplant rollatini seam-side down on top of the sauce.
  8. Pour the remaining marinara sauce over the rollatini and sprinkle shredded mozzarella cheese on top.
  9. Bake in the preheated oven at 180°C for about 15-20 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, let it cool for a few minutes, then serve warm, garnished with additional fresh basil if desired.
