Gnocchi Sorrentina

- Potato gnocchi - 400 grams
- Canned crushed tomatoes - 400 grams
- Fresh mozzarella cheese - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh basil - 10 leaves, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Grated Parmesan cheese - 30 grams
Steps
- Preheat the oven to 200°C (392°F).
- In a medium saucepan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the canned crushed tomatoes, salt, and black pepper to the saucepan. Simmer for 10 minutes, stirring occasionally.
- Stir in the chopped basil and remove the sauce from heat.
- In a large pot, bring salted water to a boil. Add the potato gnocchi and cook according to package instructions until they float to the top, usually about 2-3 minutes. Drain and set aside.
- In a baking dish, spread a layer of the tomato sauce on the bottom. Add half of the gnocchi, followed by half of the mozzarella cheese. Pour half of the remaining sauce over the top.
- Repeat the layers with the remaining gnocchi, sauce, and mozzarella cheese. Finish by sprinkling grated Parmesan cheese on top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven, let cool for a few minutes, then garnish with additional fresh basil before serving.
