Ingredients
- Ricotta cheese - 250 grams
- All-purpose flour - 100 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Shrimp - 200 grams, peeled and deveined
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cherry tomatoes - 150 grams, halved
- Fresh basil - a handful, chopped
- Parmesan cheese - 30 grams, grated
Steps
- In a mixing bowl, combine ricotta cheese, flour, egg, salt, and black pepper. Mix until a soft dough forms.
- Dust a clean surface with flour and turn the dough out. Knead gently for about 1 minute until smooth. Divide the dough into 4 pieces.
- Roll each piece into a long rope, about 1 cm thick, then cut into 2 cm pieces to form gnocchi.
- Using a fork, gently press down on each piece to create ridges. Place the gnocchi on a floured tray.
- In a large pot of salted boiling water, cook the gnocchi in batches. Once they float to the surface, cook for an additional 1-2 minutes, then remove with a slotted spoon.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
- Stir in the halved cherry tomatoes and cook for another 2 minutes until they soften.
- Add the cooked gnocchi to the skillet, toss gently to combine, and cook for an additional minute to heat through.
- Remove from heat, stir in chopped basil, and serve with grated Parmesan cheese on top.
