  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - a handful, chopped
  • Parmesan cheese - 30 grams, grated

Steps

  1. In a mixing bowl, combine ricotta cheese, flour, egg, salt, and black pepper. Mix until a soft dough forms.
  2. Dust a clean surface with flour and turn the dough out. Knead gently for about 1 minute until smooth. Divide the dough into 4 pieces.
  3. Roll each piece into a long rope, about 1 cm thick, then cut into 2 cm pieces to form gnocchi.
  4. Using a fork, gently press down on each piece to create ridges. Place the gnocchi on a floured tray.
  5. In a large pot of salted boiling water, cook the gnocchi in batches. Once they float to the surface, cook for an additional 1-2 minutes, then remove with a slotted spoon.
  6. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  7. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
  8. Stir in the halved cherry tomatoes and cook for another 2 minutes until they soften.
  9. Add the cooked gnocchi to the skillet, toss gently to combine, and cook for an additional minute to heat through.
  10. Remove from heat, stir in chopped basil, and serve with grated Parmesan cheese on top.
