Ingredients

  • Ricotta cheese - 250 grams
  • All-purpose flour - 100 grams
  • Egg - 1 large
  • Grated Parmesan cheese - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Butter - 50 grams
  • Fresh sage leaves - 10 grams

Steps

  1. In a mixing bowl, combine the ricotta cheese, flour, egg, grated Parmesan, salt, and black pepper. Mix until a soft dough forms.
  2. On a floured surface, divide the dough into four pieces. Roll each piece into a long rope, about 1.5 cm thick.
  3. Cut the ropes into 2 cm pieces to form the gnocchi. Optionally, use a fork to create ridges on each piece.
  4. Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
  5. In a skillet, melt the butter over medium heat. Add the fresh sage leaves and cook until the butter is golden and the sage is crispy.
  6. Add the cooked gnocchi to the skillet and toss gently to coat in the sage butter. Cook for an additional 1-2 minutes.
  7. Serve hot, garnished with extra grated Parmesan if desired.
