Ingredients
- Potatoes (Yukon Gold) - 400 grams
- All-purpose flour - 100 grams
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Canned crushed tomatoes - 400 grams
- Dried seaweed (nori or dulse) - 5 grams
- Basil leaves (fresh) - 10 grams
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)
Steps
- Peel the potatoes and boil them in salted water until tender, about 20 minutes. Drain and let them cool slightly.
- Mash the potatoes in a large bowl until smooth. Add the flour and salt, and mix until a dough forms. You may need to adjust the flour depending on the moisture of the potatoes.
- On a floured surface, roll the dough into long ropes about 1 cm thick, then cut them into 2 cm pieces to form the gnocchi. Press the back of a fork into each piece to create ridges.
- Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the crushed tomatoes and dried seaweed to the skillet. Stir well and let simmer for about 10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- Toss the cooked gnocchi in the tomato sauce until well coated. Serve hot, garnished with fresh basil and nutritional yeast if desired.
