- Oregano - 1 teaspoon
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)
Steps
- Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly. Mash the potatoes until smooth and let them cool completely.
- In a bowl, combine the mashed potatoes, flour, and salt. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.
- Divide the dough into 4 pieces. Roll each piece into a long rope, about 1 cm thick. Cut the ropes into 2 cm pieces to form gnocchi.
- To shape the gnocchi, press each piece with a fork to create ridges. This will help the sauce adhere better.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the crushed tomatoes, chopped basil, oregano, and black pepper to the skillet. Simmer for about 10 minutes, stirring occasionally.
- Meanwhile, bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes.
- Using a slotted spoon, transfer the cooked gnocchi directly into the sauce. Stir gently to coat the gnocchi in the sauce.
- Serve hot, garnished with additional basil and nutritional yeast if desired.
