Ingredients
- Potatoes - 500 grams
- All-purpose flour - 150 grams
- Salt - 1 teaspoon
- Nori sheets - 2 grams (finely chopped)
- Basil leaves - 30 grams
- Pine nuts - 30 grams
- Garlic - 1 clove
- Olive oil - 50 ml
- Lemon juice - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Black pepper - to taste
Steps
- Boil the potatoes in salted water until fork-tender, about 20 minutes. Drain and let cool slightly.
- Peel the potatoes while still warm, then mash them in a bowl until smooth.
- Add the flour and salt to the mashed potatoes, mixing gently until a dough forms. Be careful not to over-knead.
- Divide the dough into small pieces and roll each piece into a long rope, about 1 cm thick. Cut the ropes into 2 cm pieces to form the gnocchi.
- To shape the gnocchi, use a fork to gently press each piece, creating ridges that will hold the sauce.
- In a food processor, combine the nori, basil, pine nuts, garlic, olive oil, lemon juice, nutritional yeast, and black pepper. Blend until smooth to create the seaweed pesto.
- Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove them with a slotted spoon.
- In a large skillet, combine the cooked gnocchi with the seaweed pesto, tossing gently to coat evenly. Heat for 2 minutes over low heat.
- Serve hot, garnished with additional pine nuts and fresh basil if desired.
