- potatoes - 400 grams
- all-purpose flour - 100 grams
- nutritional yeast - 2 tablespoons
- salt - 1 teaspoon
- olive oil - 1 tablespoon
- garlic - 2 cloves, minced
- canned diced tomatoes - 400 grams
- fresh basil - a handful, chopped
- black pepper - to taste
Steps
- Start by boiling the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly before peeling.
- Mash the peeled potatoes in a bowl until smooth. Let them cool completely.
- Add the flour, nutritional yeast, and salt to the mashed potatoes. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.
- Divide the dough into quarters and roll each piece into a long rope about 1 cm thick. Cut the ropes into 2 cm pieces to form the gnocchi.
- To shape the gnocchi, use a fork to gently press each piece, creating ridges. This will help the sauce adhere better.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the canned diced tomatoes and bring to a simmer. Cook for about 10 minutes, stirring occasionally. Season with salt and black pepper to taste.
- In a separate pot, bring water to a boil and add a pinch of salt. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes.
- Using a slotted spoon, transfer the cooked gnocchi to the skillet with the tomato sauce. Toss gently to coat.
- Serve hot, garnished with fresh basil and an extra drizzle of olive oil if desired.
