Ingredients

  • potatoes - 400 grams
  • all-purpose flour - 100 grams
  • nutritional yeast - 2 tablespoons
  • salt - 1 teaspoon
  • olive oil - 1 tablespoon
  • garlic - 2 cloves, minced
  • canned diced tomatoes - 400 grams
  • fresh basil - a handful, chopped
  • black pepper - to taste

Steps

  1. Start by boiling the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly before peeling.
  2. Mash the peeled potatoes in a bowl until smooth. Let them cool completely.
  3. Add the flour, nutritional yeast, and salt to the mashed potatoes. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.
  4. Divide the dough into quarters and roll each piece into a long rope about 1 cm thick. Cut the ropes into 2 cm pieces to form the gnocchi.
  5. To shape the gnocchi, use a fork to gently press each piece, creating ridges. This will help the sauce adhere better.
  6. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  7. Pour in the canned diced tomatoes and bring to a simmer. Cook for about 10 minutes, stirring occasionally. Season with salt and black pepper to taste.
  8. In a separate pot, bring water to a boil and add a pinch of salt. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes.
  9. Using a slotted spoon, transfer the cooked gnocchi to the skillet with the tomato sauce. Toss gently to coat.
  10. Serve hot, garnished with fresh basil and an extra drizzle of olive oil if desired.
