- Fresh Basil - 50 grams
- Pine Nuts - 30 grams
- Garlic - 1 clove
- Parmesan Cheese - 30 grams, grated
- Olive Oil - 60 ml

- Pepper - to taste
Steps
- Boil a pot of salted water. Once boiling, add the gnocchi and cook according to package instructions, usually until they float to the surface, about 2-3 minutes.
- While the gnocchi is cooking, prepare the pesto by combining the basil, pine nuts, garlic, and Parmesan cheese in a food processor.
- Blend the ingredients while gradually adding the olive oil until the mixture is smooth. Season with salt and pepper to taste.
- Once the gnocchi is cooked, drain them and reserve a small cup of the cooking water.
- In a large pan over low heat, combine the gnocchi and pesto, tossing well to coat. If the mixture is too thick, add a little of the reserved cooking water to loosen it.
- Serve immediately, garnished with additional grated Parmesan and a drizzle of olive oil if desired.
