Ingredients

  • Potato Gnocchi - 250 grams
  • Fresh Basil - 50 grams
  • Pine Nuts - 30 grams
  • Garlic - 1 clove
  • Parmesan Cheese - 30 grams, grated
  • Olive Oil - 60 ml
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Boil a pot of salted water. Once boiling, add the gnocchi and cook according to package instructions, usually until they float to the surface, about 2-3 minutes.
  2. While the gnocchi is cooking, prepare the pesto by combining the basil, pine nuts, garlic, and Parmesan cheese in a food processor.
  3. Blend the ingredients while gradually adding the olive oil until the mixture is smooth. Season with salt and pepper to taste.
  4. Once the gnocchi is cooked, drain them and reserve a small cup of the cooking water.
  5. In a large pan over low heat, combine the gnocchi and pesto, tossing well to coat. If the mixture is too thick, add a little of the reserved cooking water to loosen it.
  6. Serve immediately, garnished with additional grated Parmesan and a drizzle of olive oil if desired.
