  • Egg yolks - 2

Steps

  1. Begin by finely grinding the pistachios in a food processor until they form a smooth paste. If necessary, add a tablespoon of the sugar to help the grinding process.
  2. In a saucepan over medium heat, combine the milk, heavy cream, and remaining sugar. Stir until the sugar has dissolved but do not let it boil.
  3. In a separate bowl, whisk the egg yolks until they become pale and frothy. Gradually add a small amount of the warm milk mixture to the egg yolks while whisking to temper them.
  4. Slowly pour the tempered egg yolk mixture back into the saucepan with the milk and cream, continuing to stir constantly over low heat until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).
  5. Remove from heat and stir in the pistachio paste, vanilla extract, and a pinch of salt. Mix well until fully combined.
  6. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours, or overnight for the best flavor.
  7. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
