  • Fresh spinach - 200 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 100 ml
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Pine nuts - 30 grams (for garnish)

Steps

  1. Bring a pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Stir in the vegetable broth to add moisture.
  4. Once the pasta is cooked, reserve 1/4 cup of the pasta water, then drain the pasta and add it directly to the skillet with the spinach.
  5. Stir in the nutritional yeast, lemon juice, salt, black pepper, and red pepper flakes. Mix well, adding reserved pasta water as needed for desired creaminess.
  6. Serve hot, garnished with toasted pine nuts.
