  • Cherry tomatoes - 150 grams (halved)
  • Spinach - 100 grams (fresh)
  • Parmesan cheese - 30 grams (grated)
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Basil - a handful (fresh, for garnish)

Steps

  1. Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sausage to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they soften.
  5. Add the fresh spinach to the skillet, stirring until wilted, about 2 minutes.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the rest. Add the drained fusilli to the skillet with the sausage and vegetables.
  7. If the pasta seems dry, add a bit of the reserved pasta water until the desired consistency is reached. Season with salt, black pepper, and red pepper flakes (if using).
  8. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  9. Serve immediately, garnished with fresh basil leaves.
