- Spinach - 100 grams (fresh)
- Parmesan cheese - 30 grams (grated)
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Basil - a handful (fresh, for garnish)
Steps
- Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sausage to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they soften.
- Add the fresh spinach to the skillet, stirring until wilted, about 2 minutes.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the rest. Add the drained fusilli to the skillet with the sausage and vegetables.
- If the pasta seems dry, add a bit of the reserved pasta water until the desired consistency is reached. Season with salt, black pepper, and red pepper flakes (if using).
- Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
- Serve immediately, garnished with fresh basil leaves.
