Ingredients

  • Fusilli pasta - 200 grams
  • Smoked salmon - 150 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 milliliters
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Lower the heat and add the heavy cream to the skillet, stirring to combine. Allow the cream to heat through for about 2 minutes.
  4. Add the chopped smoked salmon to the skillet, followed by the lemon juice, dill, salt, and black pepper. Stir gently to combine and cook for another 2-3 minutes until the salmon is warmed through.
  5. Once the pasta is cooked, reserve about 50 milliliters of the pasta cooking water, then drain the pasta.
  6. Add the drained fusilli to the skillet with the salmon sauce. Toss everything together, adding reserved pasta water a little at a time if the sauce is too thick.
  7. Serve immediately, garnished with grated Parmesan cheese if desired.
