Ingredients

  • Fusilli pasta - 160 grams
  • Cherry tomatoes - 300 grams
  • Fresh basil leaves - 20 grams
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  5. Add the cooked fusilli to the skillet with the tomatoes. Toss everything together and add reserved pasta water a little at a time until the desired consistency is reached.
  6. Season with salt, black pepper, and red pepper flakes if using. Remove from heat and stir in the fresh basil leaves.
  7. Serve immediately, garnished with additional basil if desired.
