Ingredients

  • Fusilli pasta - 200 grams
  • Canned tuna in olive oil - 150 grams, drained
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  5. Stir in the drained tuna, red pepper flakes, salt, and black pepper. Cook for an additional 2-3 minutes, gently breaking up the tuna as you mix it with the tomatoes.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the tuna mixture.
  7. Toss everything together, adding a little reserved pasta water if needed to create a light sauce.
  8. Stir in the chopped parsley and lemon juice before serving. Adjust seasoning with salt and pepper as desired.
