  • Fusilli pasta - 160 grams
  • Fresh ripe tomatoes - 400 grams
  • Garlic - 2 cloves
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil leaves - 10 grams
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 20 grams

Steps

  1. Bring a large pot of salted water to a boil.
  2. Add the fusilli pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
  3. While the pasta is cooking, prepare the sauce by chopping the fresh tomatoes and mincing the garlic.
  4. In a large skillet, heat the extra virgin olive oil over medium heat.
  5. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  6. Add the chopped tomatoes to the skillet and season with salt and black pepper. Cook for about 10 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  7. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  8. Add the drained pasta to the tomato sauce in the skillet, along with a bit of the reserved pasta water to help combine the sauce and pasta.
  9. Toss everything together, and add the fresh basil leaves, stirring gently to combine.
  10. Serve hot, topped with grated Parmesan cheese if desired.
