- Fresh basil leaves - 10 grams

- Parmesan cheese (optional) - 20 grams
Steps
- Bring a large pot of salted water to a boil.
- Add the fusilli pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta is cooking, prepare the sauce by chopping the fresh tomatoes and mincing the garlic.
- In a large skillet, heat the extra virgin olive oil over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the chopped tomatoes to the skillet and season with salt and black pepper. Cook for about 10 minutes, stirring occasionally, until the tomatoes soften and release their juices.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
- Add the drained pasta to the tomato sauce in the skillet, along with a bit of the reserved pasta water to help combine the sauce and pasta.
- Toss everything together, and add the fresh basil leaves, stirring gently to combine.
- Serve hot, topped with grated Parmesan cheese if desired.
