  • Ripe tomatoes - 400 grams (preferably San Marzano)
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil leaves - 10 grams, plus extra for garnish
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, prepare the sauce. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to let it brown.
  3. Dice the ripe tomatoes and add them to the skillet with the garlic. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
  4. Add salt, black pepper, and red pepper flakes (if using) to the tomato sauce, adjusting to taste. Stir in the fresh basil leaves and cook for an additional 2 minutes.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the rest. Add the drained pasta to the skillet with the tomato sauce and toss to combine, adding reserved pasta water as needed to reach desired consistency.
  6. Serve immediately, garnished with additional fresh basil leaves and a drizzle of olive oil if desired.
