Ingredients

  • Fusilli pasta - 150 grams
  • Fresh basil leaves - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Pine nuts - 20 grams
  • Extra virgin olive oil - 60 ml
  • Garlic - 1 clove
  • Chicken breast - 200 grams, cooked and shredded
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the fusilli pasta in boiling salted water according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, prepare the pesto by combining fresh basil leaves, grated Parmesan cheese, pine nuts, garlic, and a pinch of salt in a food processor.
  3. With the food processor running, slowly drizzle in the extra virgin olive oil until the mixture is smooth and creamy.
  4. Once the pasta is cooked, reserve a cup of the pasta cooking water and then drain the pasta.
  5. In a large mixing bowl, combine the drained fusilli with the prepared pesto, adding a bit of the reserved pasta water to help the sauce coat the pasta evenly.
  6. Fold in the cooked and shredded chicken breast, mixing gently until everything is well combined.
  7. Season with black pepper and additional salt to taste, then serve immediately with extra grated Parmesan on top if desired.
