Ingredients

  • Fusilli pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 60 ml (about 1 large lemon)
  • Lemon zest - 1 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the lemon juice and lemon zest to the skillet, stirring well to combine, and let it simmer for 2 minutes.
  4. Once the pasta is cooked, reserve about 1/2 cup of the cooking water, then drain the pasta and add it directly to the skillet with the lemon sauce.
  5. Toss the pasta in the sauce, adding reserved pasta water as needed to reach desired consistency.
  6. Stir in the nutritional yeast, chopped basil, salt, and black pepper, mixing well to coat the pasta.
  7. Add the halved cherry tomatoes and toss gently until everything is well combined and heated through.
  8. Serve immediately, garnished with additional basil if desired.
