Ingredients

  • Pizza dough - 250 grams
  • Olive oil - 1 tablespoon
  • Fresh mozzarella cheese - 150 grams, sliced
  • Mixed mushrooms (e.g., cremini, shiitake, and oyster) - 200 grams, sliced
  • Truffle oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh arugula - a handful for garnish

Steps

  1. Preheat your oven to 250°C (482°F) and place a pizza stone or baking tray inside to heat up.
  2. In a skillet, heat the olive oil over medium heat, then add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the sliced mushrooms to the skillet, season with salt and pepper, and cook until they are soft and browned, about 5-7 minutes. Remove from heat and stir in chopped thyme.
  4. Roll out the pizza dough on a floured surface to your desired thickness, approximately 10-12 inches in diameter.
  5. Carefully transfer the rolled dough to a piece of parchment paper for easy handling.
  6. Spread the sautéed mushrooms evenly over the dough, then layer the sliced mozzarella cheese on top.
  7. Sprinkle the grated Parmesan cheese over the pizza and drizzle with truffle oil.
  8. Using a pizza peel or the back of a baking tray, transfer the pizza (on the parchment paper) to the preheated pizza stone or baking tray.
  9. Bake for 10-12 minutes or until the crust is golden and the cheese is bubbling.
  10. Remove from the oven, allow to cool slightly, then garnish with fresh arugula before slicing and serving.
