  • Cornstarch - 25 grams
  • Sparkling water - 100 ml
  • Lemon (zested and juiced) - 1 medium
  • Fresh parsley (chopped) - 2 tablespoons
  • Olive oil - for frying
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine rice flour, cornstarch, a pinch of salt, and black pepper.
  2. Gradually add sparkling water to the mixture, whisking until smooth and slightly thickened.
  3. In a separate bowl, mix the white fish, shrimp, and squid with lemon juice, lemon zest, and chopped parsley. Season with salt and pepper.
  4. Heat olive oil in a deep pan over medium-high heat until hot (about 180°C or 350°F).
  5. Dip each piece of seafood into the batter, allowing excess to drip off, then carefully place them in the hot oil.
  6. Fry in batches until golden brown and crispy, about 3-4 minutes per batch, turning occasionally.
  7. Use a slotted spoon to remove the fried seafood and transfer to a plate lined with paper towels to drain excess oil.
  8. Serve hot, garnished with additional parsley and lemon wedges on the side.
