  • Squid (cleaned and cut into rings) - 100 grams
  • All-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Egg - 1 large
  • Sparkling water - 150 ml
  • Olive oil (for frying) - 500 ml
  • Lemon wedges (for serving) - 2

Steps

  1. In a mixing bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder.
  2. In another bowl, whisk the egg and slowly add the sparkling water to create a light batter.
  3. Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  4. Heat the olive oil in a deep pan or fryer to 180°C (350°F).
  5. Dip the fish, shrimp, and squid into the batter, allowing excess to drip off.
