Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel, wringing out excess moisture.
- In a mixing bowl, combine the grated zucchini, gluten-free flour, egg, grated Parmesan cheese, chopped parsley, minced garlic, baking powder, salt, and black pepper.
- Mix all ingredients until well combined to form a thick batter.
- Heat a non-stick skillet over medium heat and add enough olive oil to coat the bottom.
- Using a spoon or small ice cream scoop, drop spoonfuls of the zucchini mixture into the hot skillet, flattening slightly.
- Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil.
