Ingredients

  • Zucchini - 250 grams

  • Garlic, minced - 1 clove
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel, wringing out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, gluten-free flour, egg, grated Parmesan cheese, chopped parsley, minced garlic, baking powder, salt, and black pepper.
  3. Mix all ingredients until well combined to form a thick batter.
  4. Heat a non-stick skillet over medium heat and add enough olive oil to coat the bottom.
  5. Using a spoon or small ice cream scoop, drop spoonfuls of the zucchini mixture into the hot skillet, flattening slightly.
  6. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  7. Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil.
  8. Serve warm, optionally with a dollop of yogurt or a side of fresh tomatoes.
