Ingredients

  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Bell pepper - 50 grams, finely chopped
  • Green onion - 2 stalks, finely chopped
  • Chickpea flour - 100 grams
  • All-purpose flour - 50 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 150 ml
  • Olive oil - for frying

Steps

  1. In a large bowl, combine the grated zucchini, grated carrot, chopped bell pepper, and chopped green onion.
  2. In a separate bowl, mix together the chickpea flour, all-purpose flour, baking powder, salt, and black pepper.
  3. Gradually add the dry ingredients to the vegetable mixture, stirring well to combine.
  4. Add the chopped parsley and water, mixing until you have a thick batter. Let it rest for about 10 minutes.
  5. Heat olive oil in a frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil, flattening them slightly.
  6. Fry the fritters for about 3-4 minutes on each side until golden brown and crispy.
  7. Remove them from the pan and drain on paper towels. Serve warm.
