- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Bell pepper - 50 grams, finely chopped
- Green onion - 2 stalks, finely chopped
- Chickpea flour - 100 grams
- All-purpose flour - 50 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 150 ml
- Olive oil - for frying
Steps
- In a large bowl, combine the grated zucchini, grated carrot, chopped bell pepper, and chopped green onion.
- In a separate bowl, mix together the chickpea flour, all-purpose flour, baking powder, salt, and black pepper.
- Gradually add the dry ingredients to the vegetable mixture, stirring well to combine.
- Add the chopped parsley and water, mixing until you have a thick batter. Let it rest for about 10 minutes.
- Heat olive oil in a frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil, flattening them slightly.
- Fry the fritters for about 3-4 minutes on each side until golden brown and crispy.
- Remove them from the pan and drain on paper towels. Serve warm.
