- Arborio rice - 100 grams
- Almond milk - 200 milliliters
- All-purpose flour - 50 grams
- Sugar - 30 grams
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Orange zest - 1 teaspoon
- Pinch of salt
- Powdered sugar - for dusting
- Vegetable oil - for frying (about 200 milliliters)
Steps
- Rinse the Arborio rice under cold water until the water runs clear, then cook it in a pot with 200 milliliters of almond milk over medium heat, stirring occasionally until the rice is tender and the milk is absorbed, about 15-20 minutes.
- Remove the cooked rice from heat and let it cool for a few minutes.
- In a mixing bowl, combine the cooled rice, all-purpose flour, sugar, baking powder, vanilla extract, lemon zest, orange zest, and a pinch of salt. Mix until well combined and a thick batter forms.
- Heat vegetable oil in a deep frying pan over medium heat. Once the oil is hot, use a spoon to drop small amounts of batter into the oil, frying in batches to avoid overcrowding.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
- Dust the warm fritters with powdered sugar before serving.
