  • Arborio rice - 100 grams
  • Almond milk - 200 milliliters
  • All-purpose flour - 50 grams
  • Sugar - 30 grams
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Orange zest - 1 teaspoon
  • Pinch of salt
  • Powdered sugar - for dusting
  • Vegetable oil - for frying (about 200 milliliters)

Steps

  1. Rinse the Arborio rice under cold water until the water runs clear, then cook it in a pot with 200 milliliters of almond milk over medium heat, stirring occasionally until the rice is tender and the milk is absorbed, about 15-20 minutes.
  2. Remove the cooked rice from heat and let it cool for a few minutes.
  3. In a mixing bowl, combine the cooled rice, all-purpose flour, sugar, baking powder, vanilla extract, lemon zest, orange zest, and a pinch of salt. Mix until well combined and a thick batter forms.
  4. Heat vegetable oil in a deep frying pan over medium heat. Once the oil is hot, use a spoon to drop small amounts of batter into the oil, frying in batches to avoid overcrowding.
  5. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
  6. Dust the warm fritters with powdered sugar before serving.
