Steps

  1. Peel and grate the potatoes into a large bowl.
  2. Squeeze out excess moisture from the grated potatoes using a clean kitchen towel.
  3. In the same bowl, mix the grated potatoes with chickpea flour, water, minced garlic, chopped parsley, salt, and black pepper until well combined.
  4. Heat olive oil in a frying pan over medium heat.
  5. Once the oil is hot, scoop tablespoon-sized portions of the potato mixture and carefully place them in the oil.
  6. Fry the fritters for about 3-4 minutes on each side until they are golden brown and crispy.
