Ingredients

  • Chickpea flour - 150 grams
  • Water - 300 milliliters
  • Fresh parsley - 30 grams, chopped
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying
  • Lemon - 1, for serving

Steps

  1. In a mixing bowl, combine the chickpea flour, water, chopped parsley, minced garlic, salt, and black pepper. Whisk until smooth and let it rest for about 15 minutes.
  2. Heat a non-stick skillet over medium heat and add enough olive oil to coat the bottom.
  3. Once the oil is hot, drop spoonfuls of the batter into the skillet, flattening them slightly to form fritters.
  4. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fritters from the skillet and place them on paper towels to drain excess oil.
  6. Serve warm with lemon wedges on the side.
