Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - for frying

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Cut the cauliflower into florets and steam them for about 10 minutes until tender.
  3. Once steamed, allow the cauliflower to cool slightly, then finely chop or mash it with a fork until it resembles rice.
  4. In a mixing bowl, combine the chopped cauliflower, almond flour, grated Parmesan cheese, egg, garlic powder, onion powder, salt, black pepper, and baking powder. Mix until well combined.
  5. Heat a generous amount of olive oil in a frying pan over medium heat.
  6. Form the cauliflower mixture into small patties, about 4 cm in diameter, and carefully place them in the hot oil.
  7. Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy.
  8. Once cooked, transfer the fritters to the prepared baking tray and place them in the oven for an additional 5 minutes to ensure they are cooked through.
  9. Serve warm, optionally garnished with fresh herbs or a drizzle of olive oil.
