- Cauliflower - 300 grams
- Almond flour - 50 grams
- Parmesan cheese - 30 grams, grated
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Olive oil - for frying
Steps
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- Cut the cauliflower into florets and steam them for about 10 minutes until tender.
- Once steamed, allow the cauliflower to cool slightly, then finely chop or mash it with a fork until it resembles rice.
- In a mixing bowl, combine the chopped cauliflower, almond flour, grated Parmesan cheese, egg, garlic powder, onion powder, salt, black pepper, and baking powder. Mix until well combined.
- Heat a generous amount of olive oil in a frying pan over medium heat.
- Form the cauliflower mixture into small patties, about 4 cm in diameter, and carefully place them in the hot oil.
- Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy.
- Once cooked, transfer the fritters to the prepared baking tray and place them in the oven for an additional 5 minutes to ensure they are cooked through.
- Serve warm, optionally garnished with fresh herbs or a drizzle of olive oil.
