Steps

  1. In a large mixing bowl, combine the grated carrots, whole wheat flour, egg, grated Parmesan cheese, chopped parsley, baking powder, salt, and black pepper.
  2. Mix the ingredients until they are well combined and form a thick batter.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
  4. Once the oil is hot, drop spoonfuls of the carrot mixture into the skillet, flattening them slightly to form fritters.
