Steps

  1. In a mixing bowl, combine all-purpose flour, chickpea flour, minced garlic, chopped parsley, salt, and black pepper.
  2. Gradually add water to the dry ingredients, stirring until a smooth batter forms.
  3. Fold in the chopped artichokes until they are evenly coated in the batter.
  4. Heat olive oil in a frying pan over medium heat.
  5. Once the oil is hot, drop spoonfuls of the artichoke batter into the pan, flattening them slightly.
  6. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
