- Baccalà (salted cod) - 200 grams
- Almond flour - 50 grams
- Egg - 1 large
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Baking powder - 1 teaspoon
- Black pepper - to taste
- Salt - to taste
- Olive oil - for frying
Steps
- Soak the salted cod in water for 24 hours, changing the water several times to remove excess salt. Drain and pat dry.
- In a mixing bowl, flake the soaked cod into small pieces and add the almond flour, egg, parsley, garlic, baking powder, black pepper, and salt. Mix until well combined.
- Heat olive oil in a frying pan over medium heat. Use a spoon to drop small amounts of the cod mixture into the hot oil, flattening them slightly to form fritters.
- Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy. Remove and place on a paper towel to drain excess oil.
- Serve hot, garnished with additional parsley if desired.
