Ingredients

  • Baccalà (salted cod) - 200 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Baking powder - 1 teaspoon
  • Black pepper - to taste
  • Salt - to taste
  • Olive oil - for frying

Steps

  1. Soak the salted cod in water for 24 hours, changing the water several times to remove excess salt. Drain and pat dry.
  2. In a mixing bowl, flake the soaked cod into small pieces and add the almond flour, egg, parsley, garlic, baking powder, black pepper, and salt. Mix until well combined.
  3. Heat olive oil in a frying pan over medium heat. Use a spoon to drop small amounts of the cod mixture into the hot oil, flattening them slightly to form fritters.
  4. Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy. Remove and place on a paper towel to drain excess oil.
  5. Serve hot, garnished with additional parsley if desired.
