  • Eggs - 4 large
  • Parmesan cheese - 50 grams, grated
  • Ricotta cheese - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh basil - 5 grams, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add the grated zucchini to the skillet, season with salt and pepper, and cook for about 5-7 minutes, stirring occasionally, until softened and any excess moisture has evaporated.
  4. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and ricotta cheese until well combined.
  5. Stir in the cooked zucchini mixture and chopped basil into the egg mixture until fully incorporated.
  6. Pour the mixture back into the skillet and cook for 2-3 minutes on the stove until the edges start to set.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
  8. Remove from the oven and let cool for a few minutes before slicing. Serve warm or at room temperature.
