Ingredients

  • Large Eggs - 4
  • Bell Pepper (red) - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Spinach - 100 grams, chopped
  • Red Onion - 1 small, diced
  • Olive Oil - 2 tablespoons
  • Parmesan Cheese - 30 grams, grated
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Fresh Basil - A handful, chopped (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
  3. In a medium oven-safe skillet, heat the olive oil over medium heat. Add the diced red onion and bell pepper, and sauté for about 3-4 minutes until softened.
  4. Add the diced zucchini and chopped spinach to the skillet, and cook for an additional 3-4 minutes until the spinach wilts and the zucchini is tender.
  5. Pour the egg mixture over the sautéed vegetables in the skillet, and gently stir to combine.
  6. Cook on the stovetop for about 2-3 minutes until the edges begin to set.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is puffed and set in the center.
  8. Remove from the oven, let cool for a couple of minutes, and slice into wedges. Garnish with fresh basil if desired, and serve warm.
