- Zucchini - 1 medium, diced
- Spinach - 100 grams, chopped
- Red Onion - 1 small, diced
- Olive Oil - 2 tablespoons
- Parmesan Cheese - 30 grams, grated
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Basil - A handful, chopped (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
- In a medium oven-safe skillet, heat the olive oil over medium heat. Add the diced red onion and bell pepper, and sauté for about 3-4 minutes until softened.
- Add the diced zucchini and chopped spinach to the skillet, and cook for an additional 3-4 minutes until the spinach wilts and the zucchini is tender.
- Pour the egg mixture over the sautéed vegetables in the skillet, and gently stir to combine.
- Cook on the stovetop for about 2-3 minutes until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is puffed and set in the center.
- Remove from the oven, let cool for a couple of minutes, and slice into wedges. Garnish with fresh basil if desired, and serve warm.
