Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a bowl, whisk together the eggs, salt, and black pepper until well combined.
- Stir in the crumbled feta cheese and halved cherry tomatoes into the egg mixture.
