  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a bowl, whisk together the eggs, salt, and black pepper until well combined.
  5. Stir in the crumbled feta cheese and halved cherry tomatoes into the egg mixture.
  6. Pour the egg mixture over the spinach and onion in the skillet, ensuring even distribution.
  7. Sprinkle the grated Parmesan cheese on top.
