Steps
- Peel the potatoes and slice them thinly (about 2-3 mm thick).
- In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced potatoes and cook for about 10 minutes, stirring occasionally until they are tender and lightly golden.
- Add the chopped onion to the skillet with the potatoes and cook for another 5 minutes until the onion is soft and translucent.
- In a bowl, whisk together the eggs, grated Parmesan cheese, salt, black pepper, and chopped parsley.
- Pour the egg mixture over the sautéed potatoes and onions in the skillet, ensuring even distribution.
