Steps

  1. Peel the potatoes and slice them thinly (about 2-3 mm thick).
  2. In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced potatoes and cook for about 10 minutes, stirring occasionally until they are tender and lightly golden.
  3. Add the chopped onion to the skillet with the potatoes and cook for another 5 minutes until the onion is soft and translucent.
  4. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, black pepper, and chopped parsley.
  5. Pour the egg mixture over the sautéed potatoes and onions in the skillet, ensuring even distribution.
