  • Fresh spinach - 50 grams
  • Red onion (finely chopped) - 1 small
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, whisk the eggs together with salt, black pepper, and chopped parsley until well combined.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add the chopped red onion and minced garlic, sautéing until the onion is translucent.
  4. Add the shrimp to the skillet, cooking for about 3-4 minutes until they turn pink.
  5. Stir in the cherry tomatoes and fresh spinach, and cook until the spinach wilts.
  6. Pour the egg mixture over the shrimp and vegetables in the skillet, gently stirring to combine.
  7. Cook for 2-3 minutes on the stovetop until the edges start to set.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is fully set and lightly golden on top.
