- Fresh parsley (chopped) - 2 tablespoons

Steps
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, whisk the eggs together with salt, black pepper, and chopped parsley until well combined.
- Heat olive oil in an oven-safe skillet over medium heat. Add the chopped red onion and minced garlic, sautéing until the onion is translucent.
- Add the shrimp to the skillet, cooking for about 3-4 minutes until they turn pink.
- Stir in the cherry tomatoes and fresh spinach, and cook until the spinach wilts.
- Pour the egg mixture over the shrimp and vegetables in the skillet, gently stirring to combine.
- Cook for 2-3 minutes on the stovetop until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is fully set and lightly golden on top.
- Remove from the oven, let it cool for a couple of minutes, then slice and serve warm.
