Ingredients

  • Eggs - 4 large
  • Mushrooms (cremini or button) - 200 grams, sliced
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
  3. In a non-stick oven-safe skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes, or until they are softened and browned.
  4. Add the minced garlic to the skillet and cook for another minute, stirring constantly to prevent burning.
  5. Pour the egg mixture over the sautéed mushrooms in the skillet, ensuring even distribution. Cook on the stove for about 3-4 minutes, or until the edges start to set.
  6. Sprinkle the chopped parsley over the top of the frittata.
  7. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the frittata is set and slightly golden on top.
  8. Remove from the oven, let it cool for a minute, then slice and serve warm.
