- Eggs - 4 large
- Yellow onion - 1 medium (about 150g)
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Parmesan cheese - 30g (grated)
Steps
- Peel and thinly slice the yellow onion.
- In a medium skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, cooking until they are soft and caramelized, about 10-12 minutes, stirring occasionally.
- While the onions are cooking, crack the eggs into a mixing bowl. Add the black pepper and whisk until well combined.
- Once the onions are caramelized, reduce the heat to low and pour the egg mixture over the onions in the skillet. Gently stir to combine.
- Sprinkle the chopped parsley and grated Parmesan cheese evenly on top.
- Cook on low heat for about 8-10 minutes until the edges start to set. You can cover the skillet with a lid to help the top cook evenly.
- Once the frittata is mostly set but still slightly jiggly in the center, transfer the skillet to a preheated oven at 180°C (350°F) and bake for an additional 5 minutes to fully set the top.
- Remove from the oven, let it cool for a couple of minutes, then slice and serve warm.
