Ingredients

  • Eggs - 4 large
  • Yellow onion - 1 medium (about 150g)
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Parmesan cheese - 30g (grated)

Steps

  1. Peel and thinly slice the yellow onion.
  2. In a medium skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, cooking until they are soft and caramelized, about 10-12 minutes, stirring occasionally.
  3. While the onions are cooking, crack the eggs into a mixing bowl. Add the black pepper and whisk until well combined.
  4. Once the onions are caramelized, reduce the heat to low and pour the egg mixture over the onions in the skillet. Gently stir to combine.
  5. Sprinkle the chopped parsley and grated Parmesan cheese evenly on top.
  6. Cook on low heat for about 8-10 minutes until the edges start to set. You can cover the skillet with a lid to help the top cook evenly.
  7. Once the frittata is mostly set but still slightly jiggly in the center, transfer the skillet to a preheated oven at 180°C (350°F) and bake for an additional 5 minutes to fully set the top.
  8. Remove from the oven, let it cool for a couple of minutes, then slice and serve warm.
