  • Carrots - 200 grams, grated
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Onion - 50 grams, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium bowl, whisk the eggs with salt and black pepper until well combined.
  3. In an oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened, about 3-4 minutes.
  4. Add the grated carrots to the skillet and cook for an additional 5 minutes, stirring occasionally until they are slightly tender.
  5. Pour the egg mixture over the sautéed vegetables, ensuring even coverage. Cook for 2-3 minutes without stirring until the edges start to set.
  6. Sprinkle the chopped parsley on top, then transfer the skillet to the preheated oven.
  7. Bake for about 10-12 minutes, or until the frittata is set and lightly golden on top.
  8. Remove from the oven, let cool for a few minutes, slice, and serve warm.
